Meet The Chef
Chef Amy Cartwright hails from beautiful Long Island, Bahamas where she learned farm table cooking and baking at a young age under the watchful eyes of matriarchs in her family. She was also taught ocean to table cooking by her father who was a local fisherman and farmer. Many of her summers were spent picking fresh native fruits (guava, dilly, soursop), line fishing, diving conch, catching land crabs and raising livestock. It was in those formative years that she realized she wanted to be a chef. After graduating high school, she relocated to Nassau to pursue her career in Culinary Arts.
Amy is an exclusive chef with about a years' experience in the yachting industry working on motor and sail yachts ranging from 75 - 139ft. The yachting industry has not only taken her throughout the islands of The Bahamas, including the Exumas and Harbor Island but also internationally to places like San Diego, Mexico, Costa Rica, Panama and across the Panama Canal.
She also has over a decade of experience working in some of the most prestigious, fine-dining restaurants in the Bahama islands and cays where she has developed extensive knowledge of multiple global cuisines including from-scratch, farm to table, and ocean to table cuisine. Her specialties consist of pastry, breads, various diets and special dietary restrictions including keto and paleo.
